Medium, mild malty sweetness, tart tang
After separating the curds and whey in our cheesemaking vat, Veldhuizen soaks the curds in a stout, dark beer to create a deeply flavorful cheese with a tart tang. Veldhuizen's tradition dictates that they always use a genuine Texas beer – such as Shiner Bock or some of their other favorites from Saint Arnold’s. The finish on this cheese is a medium sharpness, with a mild malty sweetness.
